★ ★ ★ ★ ★ To get fish with proper fish cutlery is a sign of real professionalism and I'm afraid very rare nowadays particularly in tourist hotspots. I had char (Saibling) and it was really delicate and pulled cleanly off the bone. Well done. Smart businesslike service too.
